Choose good ingredients - we purchased all of the ingredients in local Lidl.

Pumpkin puree - Make homemade from scratch, it's so easy, or choose your favorite store-bought.

Make it even more flavorful -  For a more festive touch, add a splash of rum or coffee liqueur. Orange liqueur or a bit of orange zest also works wonderfully in the cream.

Make ahead - For the best results, beat the egg yolks long enough, gently fold in the egg whites, and, most importantly, allow the flavors to develop.

Tiramisu is a classic Italian dessert made with layers of espresso-soaked ladyfingers, mascarpone cheese, cocoa powder, and sometimes a splash of liqueur like Marsala or coffee liqueur.

Eggs can be pasteurized by whisking them over a bain marie (pour water into a saucepan and bring to a boil, then place a bowl over the pan and add the eggs to a bowl) and heating to at least 70 °C, but not above 80 °C, as higher heat will turn them into scrambled eggs. METHOD

  • pumpkin spice mixture

    In a bowl, mix together all the spices for the pumpkin spice blend. Set aside until ready to use.

  • cream

    Separate the egg yolks from the egg whites. Add salt and sugar to the egg whites and beat until stiff peaks form. In a larger bowl, add the remaining sugar to the yolks and beat well with an electric mixer for about 2–3 minutes. Add the pumpkin purée, 2 teaspoons of homemade pumpkin spice mix, and the mascarpone, then beat until combined. Gently fold the whipped egg whites into the mixture with a spatula to create a light, airy cream.

  • coffee and cookies

    Pour the brewed coffee from a coffee maker or espresso machine into a deep baking dish. If using Turkish coffee, strain it to remove any grounds. Stir in 2 teaspoons of the pumpkin spice mix. Quickly dip the ladyfingers into the coffee mixture, then arrange them in a larger baking dish (approximately 20 cm × 30 cm) to fully cover the bottom. Spread half of the cream over the ladyfingers. Add another layer of coffee-dipped ladyfingers and finish with the remaining cream. Refrigerate for at least 4 hours, or preferably overnight.
